Allulose เป็นน้ำตาลโมเลกุลเดี่ยวชนิดหนึ่ง มีรสหวาน ได้มาจากน้ำตาลค่ะ มีอยู่ในธรรมชาติ เช่นในมะเดื่อแห้ง ลูกเกด เป็นต้น แต่มีจำนวนน้อย จึงเป็น Rare Sugar หรือที่เรียกว่า “น้ำตาลหายาก” โดยมีโครงสร้างของโมเลกุลสลับที่กันหนึ่งตัว สามารถดูดซึมสู่กระแสเลือดได้ แต่มีผลกระทบน้อยมากต่อระดับน้ำตาลและอินซูลินในเลือด เนื่องจากไม่มีกระบวนการเผาผลาญเกิดขึ้นในร่างกาย จึงไม่มีการสะสมในรูปของไขมัน จึงจัดได้ว่าเป็นสารให้หวานในอุดมคติในยุคปัจจุบัน อีกทั้งอัลลูโลส ยังเป็นไฟเบอร์ ซึ่งเป็นอาหาร (Prebiotics) ให้กับจุลชีพ (Probiotics) ที่ดีในลำไส้ด้วย นอกจากนี้ การทานอัลลูโลส ยังช่วยกระตุ้นให้ร่างกายหลั่งฮอร์โมน (Natural GLP-1) ในลำไส้ ซึ่งไปเพิ่มความรู้สึกอิ่มและช่วยเรื่องการควบคุมน้ำหนักด้วยค่ะ ปัจจุบัน ในทางการแพทย์มีการสังเคราะห์ยา GLP1 Agonist เช่น Ozempic, Wegovy, Zepbound เป็นต้น เพื่อใช้ในการลดระดับน้ำตาลในเลือด ควบคุมความหิวและส่งผลให้น้ำหนักตัวลดลง

เนื่องจาก Allulose มีต้นทุนการผลิตที่สูงอุตสาหกรรมอาหารจึงมีอิทธิพลต่อการรับรองการใช้ Allulose ในบางประเทศ รวมถึงการนำ Allulose ไปผสมกับสารให้ความหวานอื่นโดยไม่ระบุส่วนผสม เพื่อลดต้นทุน
Allulose ปลอดภัย ไม่มีผลต่อกระทบต่อผู้ที่เป็นมะเร็ง แต่ผลเชิงบวกยังต้องอาศัยการศึกษาทางคลินิก เพื่อยืนยันผลในประชากรจำนวนมากต่อไป

Allulose is a type of monosaccharide (single sugar molecule) that has a sweet taste and is derived from sugar. It occurs naturally in small amounts in foods such as dried figs and raisins, which is why it is classified as a Rare Sugar. Its molecular structure differs from regular sugar by one position switch. Although it can be absorbed into the bloodstream, it has very little impact on blood glucose and insulin levels because it is not metabolized in the body. As a result, it does not accumulate as fat, making it an ideal sweetener for modern times.
In addition, allulose also acts like fiber, serving as a prebiotic that nourishes beneficial gut microbiota (probiotics). Consumption of allulose can also stimulate the gut to secrete natural GLP-1 hormones, which enhance satiety and support weight management. In medicine, synthetic GLP-1 agonists such as Ozempic, Wegovy, and Zepbound are used to lower blood sugar levels, control appetite, and reduce body weight.
However, because allulose is rare in nature and present only in very small amounts, even though it can now be produced, the process remains complex and costly—making it tens of times more expensive than table sugar. As a result, the food industry has not widely adopted its use. In some cases, the high production cost has influenced food industries to restrict its approval in certain countries, or to mix allulose with other sweeteners without disclosing the blend, in order to reduce costs.
Allulose is considered safe and does not negatively affect cancer patients, though more clinical studies are needed to confirm its positive effects in large populations. It provides only 0.4 kcal per gram, with about 70% of the sweetness of regular sugar.
Recommended daily intake: 0.4 g per kilogram of body weight.
If consumed in excess, it may cause bloating or, in some individuals, diarrhea.
Therefore, allulose is a naturally derived sugar, not a synthetic substance.
It has been recognized by the US FDA as safe for consumption (GRAS status).
